Just like Bette's Featherlight Rice blend, the "Bette's Gourmet Four Flour Blend" put out by Authentic Foods is a great product, I love it! My baked goods turn out as though I used regular flour! The packaging is better than other brands that offer gluten free grains/flour - I use it as someone that is gluten intolerant but... I live in the rural country and there are no vendors that sell this particular product in my area so I have to buy it off-line... The only kicker about buying it off line is that the shipping cost is almost as much as the product itself so you end up paying double! It would be nice if Amazon could offer "free shipping" but...

I, too, am a gluten outcast. I don't bake, and I can muddle through with pre-cooked gluten-free (GF) baked goods from Whole Foods and Trader Joe's. But what I thought I would have to give up forever is a roux. You see, I am from south Louisiana and unless I can make a roux I cannot prepare the foods that I grew up on and still love today. I tried and tried to make a roux with different kinds of GF flour, but nothing worked. They tasted funny or never browned or both. Then I tried this flour last week, and it worked perfectly. We had a great gumbo for the first time in many months, and honestly, we could not tell the difference from a gumbo made with the "normal" roux. I intend to try cooking a sauce piquante in the near future. For those of you who don't know what a roux is, it is just browned flour and oil (not that different from gravy, but darker and with a paste consistency). A roux is the basis for Cajun cooking and is the first step to any dish. I also crave southern fried chicken sometimes, and I intend to use the Bette 4-flour blend for that, too. Any flour that can make a good roux can also make good fried chicken, chicken fried steak, gravy, etc. I can't say that there aren't other products out there just as good as this one, but I can say that this one works great for me.

I am gluten intolerent, or what ever you want to call it. I get asthma from wheat flour, so I've spent the last 8 years searching for the perfect flour. I've been using this for years now, I love this stuff. I use it for cookies, cakes, crepes, pancakes, waffles*, madalines, yorkshire pudding, flouring meats for crispy frying, thickening soups and sauces, etc etc. The only thing that it hasn't worked for is bisquits. I think because this flour needs a binding agent, such as eggs or Xantham Gum. With just the butter the dough after baking falls apart. flakey and yummy, but a total mess! It also tastes kind of bitter raw, but once it's baked or cooked it's exactly the same flavor and texture as wheat flour. You can't go wrong with this alternative. Go forth confidently and experiment with all your favorite recipes using this wonderful flour! I love trying Martha Stewart's cookie recipes, this flour works perfectly for all I've tried. *Some recipes may require a little extra leavening agent (baking soda or baking powder), such as waffles, madalines and pancakes.

if you are gluten intolerant this flour allows you to bake just like everybody else. this is the first flour that i have found that gives results approaching that of regular flour for baked goods.
