This bread is absolutely wonderful hot out of the offen. The flavor and texture are perfect. I add extra raisins and cinnamon to the dough, which is very easy to make. It is not as good after cooling, though. I think it is better toasted when it is a day or so old.

This mix iis about half the price I can find iit in stores. A bit different texture, but very good.

Okay, let's face it--gluten free bread will never have the texture of gluten bread. However, this bread does approximate it as close as you can get. There are plenty of raisins. I was a bit worried as my bread maker indicates you are to add dried fruit separately and the raisins are incorporated into the mix, but it turned out perfectly. I put mine on the one rise setting with light crust, but will set to medium crust next time. The only difference I can note between this and "regular" raisin bread (that I can remember from my pre-gluten free days) is that it is not quite as sweet. But, you can always add more sugar if you like it that way. My 14 year old nephew, who does not have to be on a gluten free diet) ate about a half a loaf of this in a day, as is, with just butter spread on it.
