I don't have a problem with this rising. If it doesn't rise enough for you, add an extra egg. I have added 2 eggs when I don't have any jumbo on hand. Also, I put a little less than half of the batter in a 8x8 metal baking pan, then a layer of toping. Next put in the rest of the batter and the rest of the topping. If it is too sweet, cut back on the topping. Or, do like I do, put more on top and let it crumble off your piece. My coworkers and children like it sweet and eat all the topping.

This coffee cake is so good I have a hard time sharing it with my family. It is light and fluffy and the "crumb" mixture is delicious. I'm getting hungry just writing about it!

Thought I would try this on a whim. I added about 1/3 cup of sour cream to the mix since it was going to go bad soon. The cake turned out great. I ate on it for a couple of days. I would recommend. I just used a regular 8x8 glass dish to bake in, not the springform pan it calls for. It still turned out fabulous!

We've tried all brands of gluten-free foods for celiac disease sufferers, and "The Gluten Free Pantry" brand is best! This was packaged great, at a price much less than we would have paid at the local grocer - and these items can be hard to find. The quality and taste are outstanding. No one would know these are gluten free! This coffee cake mix can be tastely modified by adding almonds, orange peel, and topped with a glaze made with fresh orange juice and powdered sugar.

I made this cake according to directions (no deviations) and it is delicious. My whole family enjoyed it! The crumb topping is a little heavy and the cake didn't rise to make a beautiful presentation, but the taste is way too good to pass up. Taste and texture are terrific!
