Tortilla Soup

I just got this recipe today from a friend, email. Looking at it I dont see of anything we cant have. Now i will use soy cheese not regular, but it looks yummy

Tortilla Soup

1 tsp corn oil                                         
1/2 cup fresh cubed onions                           
1/2 tsp ground cumin                                   
1/2 tsp ground oregano                                 
1 garlic clove, minced                                 
4 cups vegetable broth
1 cup fresh peeled, seeded and cubed tomato   
2 fresh jalapeno peppers                       
1/4 cup freshly squeezed lime juice
1 tbsp fresh chopped cilantro , salt and ground pepper for taste
1 tbsp corn oil
4  6-in. corn tortillas, cut in thin strips
1 1/2 cups grated cheddar cheese or montery jack cheese.

One: Heat 1 tsp oil in a large heavy saucepan over medium heat. Cook the onions with the cumin, oregano and garlic for 3 minutes, stirring often, until tender.
Two: Add the broth, tomatoes, lime juice, jalapeno peppers and 1 tbsp of chopped cilantro. Season to taste with salt and pepper and bring to a boil. Lower the heat and let simmer for 10 minutes.
Three: In large nonstick skillet, heat 1 tbsp oil over medium-high heat. Fry the tortilla strips, in batches, until they are crsipy and golden. Drain them on paper towels.
Four: Divide the fried tortilla strips into 4 soup bowls, ladle in the soup, and garnish with grated cheese and chopped cilantro. Serve Immediately

This really sounds delicious!  I could check our lime tree for the lime.  And I love corn tortillas.
