I have so many questions - time will answer them all I suppose - however - I was pleased to see that medical advancement is at least underway. I am a devout carnivore and so meat is a good option - but I was put off by not seeing bacon or ham. Any information on what if any is OK?? like a purely smoked ham for Christmas??

I see no reason why a smoked ham would not be gluten free. Of course rule number one with celiac disease is always read the ingredients. The issues with meats usually revolve around marinating. Most marinades and many barbecue sauces and almost all brands of soy sauce contain wheat. If a ham has brine added you certainly want to read the ingredients, but then, rule number one says always read the ingredients anyway.
The more a meat product is prepared, the greater the risk it will contain gluten. Lunch meats are especially dangerous.
In the US most types of sausage are OK, but in the UK bread products are often used as filler in sausages.
I stopped eating meat long before I found out that I had celiac disease, so my knowledge of gluten issues around meat is limited. Maybe some other folks here will have something to add.
It gets a lot easier after a while, honest.
