Importance of Nutritional Assessment and Collaboration between Physicians and Registered Dietitians in Detecting Celiac Disease: Two Case Studies
           


Celiac disease (CD) is an autoimmune inflammatory disease of the small bowel that can lead to severe villous atrophy, malabsorption, and even gastrointestinal malignancy. It is triggered by the gluten proteins of wheat, barley, and rye. Prevalence of CD is highest in Europe and in countries where Europeans have emigrated, including North America and Australia. CD has been thought to affect 1 in 1,500 people throughout Europe, with areas of greater frequency ().
