All beans are inherently GF. If you are GF and vegan, as I am, beans can be a very valuable source of protein.
We use a Cuisinart to make sauces sometimes. I'll throw a raw red or orange bell pepper, a few small carrots, a tomato or two, maybe some leaves if I'm cooking broccoli or cauliflower, a RINSED can of pinto beans, a bit of olive oli, too much salt, and some vinegar in the Cusinart and grind it up into a thick liquid.
Then I thicken it by boiling away a bit of the moisture, maybe in a skillet with onions and/or mushrooms, and at the last minute add in the days star vegetable from the steamer.
Of course you have to add some curry powder!
Serve this over a bed of rice, or quinoa/millet mixture, and you have a complete, nutritious, GF vegan meal.
You know about rinsing canned beans, right? You should always rinse canned beans under cold running water until there is no longer any foaming. This gets rid of most of the polysaccharides that give you gas.
Really, you probably already knew that.
