I went and read the abstract for this study.  I was amazed to see this statement "Forty-eight percent of participants reported that patients do not follow a strict GFD because of a lack of access to gluten-free foods".  Hello?

Anyone with access to a supermarket has access to literally hundreds of gluten free foods.

Every single vegetable in the produce aisle is gluten free, there are no exceptions.

Every variety of fruit in it's natural state is gluten free.

All root crops like potatoes, carrots, beets, onions and so forth are gluten free.

Rice is gluten free.

Meat that has not had anything added to it is gluten free.

All varieties of beans are gluten free.

The problem with the people in this study who had difficulty following a GF diet is not that they did not have access to GF food, it is that they did not know that they had nearly unlimited access to gluten free food. 

This is a problem of education, and it looks like a golden opportunity for dietitians to do what they do best, teach people how to choose food wisely.

For wayyy too long celiac has been seen a "rich white woman" disease and all the diet sheets I've seen are aimed at folks from Westchester County, NY, not Soles Swamp NC. I'm not going to eat (looks at sheet) "grilled cod". I've never seen a cod. Now catfish stew, with potatoes, bacon and red pepper, there is a gluten free meal!
