I have sent the following message to the creator of this video:

Hello Anette,

I'm writing to you today about the YouTube video "Norwegian chocolate cake - Sugar, dairy and wheat free".  In the description of your recipe the term "gluten free" is included.  The recipe calls for spelt flour.  Spelt is not gluten free.  it is an ancient variant of wheat, it absolutely does include gluten, and people who have celiac disease must avoid spelt.

The US government National Institute of Health lists spelt as containing gluten on this page:
http://digestive.niddk.nih.gov/ddiseases/pubs/celiac/

The National Foundation for Celiac Awareness indicates that spelt is not gluten free on this page:

On January 31, 2006 US authorities raided a bakery in Minneapolis and seized loaves of bread containing spelt because they were falsely labeled as wheat free:

A company named Nature Bake advises their customers with celiac disease not to eat spelt:

On March 19, 2008 the FDA required the bakery Food For Life to recall their spelt bread that was falsely labelled Wheat free:

Mulligans Bakery, which makes gluten free bread, advises their customers that spelt is a hybrid of wheat and must be avoided by people with celiac disease.

I operate a network of websites for people with celiac disease, including sensibleceliac.com http://www.sensibleceliac.com/ and many others.  I have studied the scientific facts related to the gluten free diet. I was diagnosed with celiac disease over ten years ago.  I can assure you with absolutely no doubt whatsoever that spelt is not gluten free, and that any recipe containing spelt is not gluten free.

Please do not spread false information that might cause harm to other people.  I'm sure your intentions are good, and that this is simply an error and nothing more, but I felt it was my duty to bring this matter to your intention.

On the brighter side, your YouTube video was very well produced, and I hope you will continue making them.

Best wishes
Steve Rider
