Newspaper Article About GF Bread in Oil City, PA
« on: June 01, 2005, 11:42:59 AM »
Our automatic celiac news 'bot ( http://sensibleceliac.com/news.php ) found an article today that was posted on a newspaper website in a somewhat rural town in Pennsylvania, Oil City.

The article talks about how happy an area resident was when she found a local source for fresh-baked GF bread.

It's a happy story, I recommend it:

Okay call me stupid.UMMMMMMMMMMMMMM i never knew this

“It’s really hard to go buy groceries. Even frozen vegetables are sprayed with some sort of coating that has wheat in it so they don’t clump together,” said Kaufman.

If this is right no wonder I still get sick some. I dont usually eat frozen veggies-- but do occasionally

I believe that the statement about "even frozen vegetables are sprayed with wheat" is completely and utterly false. If a food product is sprayed with wheat, as is sometimes done with frozen french fries, then wheat must be listed as an ingredient (in the USA)  under law.

When I see frozen french fries that have been sprayed with wheat, which is done to promote the Golden Brown Delicious appearance, I also see wheat listed ass an ingredient. By a logical extension, when I do not see wheat listed as an ingredient I'm inclined to form a preliminary opinion that there is no wheat added.

So the way to demystify this latest false alarm about frozen vegetables is to apply Rule Number One: always read the label.

There is a great deal of misinformation circulating in the celiac community, and some of these myths occasionally spin out  into the press.  For example, earlier this week I read another newspaper article that claimed that salt contained gluten. The article just glibly stated that salt contained gluten, as if this was always the case, then went on to some other exaggerations.  Salt is a simple chemical compound containing sodium and chlorine.

People with celiac disease already have a hard enough time avoiding gluten as it is. Publishing ludicrous claims without doing any fact checking does not help.

I would be more on the suspicious, or at least cautious, side of things.  Pre grated cheese can have flour added to prevent clumping and not have wheat listed on the package.  (I ate it and continued being royally sick for about 5 weeks before I learned otherwise--but nothing on the package told me.)  Chocolate bars can be processed by having flour on the production belt to prevent sticking, and yet not have to list wheat on the package.  I think assuming claims are ludicrous, when they may well be true and make us sick, is being too bold.  So some of them turn out to be ludicrous myths. . . Big deal, my body appreciates the caution.  And the item I ridiculously avoided by being suspicious will still be there in the future if I decide to eat it later.
