Last week I tried my hand at baking cookies for the first time in many years, I made these GFCF vegan cookies, and they were a big hit. We were planning a 975 mile car trip the next day, and snacks were a requirement. I found this recipe on the Internet somewhere, but I don't recall where. None of the cookies were left we we got home
Teff Peanut Butter Cookies1-1/2 cups Teff flour (you might be able to use any GF flour, I suppose)
1/2 teasp. salt
1/2 cup real Vermont Maple Syrup (yum!)
1/2 cup grapeseed oil (or canola, or corn oil)
1 teasp Vanilla extract
1 cup peanut butter (I use ordinary Skippy brand)
Preheat oven to 350˚. Mix the maple syrup, oil, vanilla flavoring, salt and peanut butter in a large bowl. Use a blender or stick blender for best results and speed. Add the teff flour and mix well. Shape the dough into ping pong ball sized bits, and place on a greadsed cookie sheet. Mash each dough ball down with the tines of a fork, using two angles 90˚ apart to get the traditional appearance of peanut butter cookies. Bake for 13 to 15 minutes.
