Celiac ironies

There's something that just strikes me as very ironic in my journey to celiac disease.  We have lived in 5 different locations over the past 30 years, but I didn't get diagnosed with CD until we got here to the Palouse, that region of the country that includes SE Washington and Western Idaho which is known for its wheat production!  In fact for many years, and perhaps still, Whitman County in Washington had the highest income per capita in the whole country because of the wheat farmers!  The area is lovely as the green stalks stretch throughout the rolling hills, and in August it all turns to those "amber waves of grain."  This is like "water, water, everywhere and not a drop to drink."

Fortunately we have always liked lentils and it is also the lentil capital of the world, at times producing 98% of the world's supply--did you know they come in an assortment of varieties and colors?
