With all forms of wheat based foods out of the picture, rice has become a major staple in my diet.  I like to tell people that rice is my friend.

Rice is an unusually easy food to digest. I sometimes eat rice to calm my tummy if it is in a bad mood.

At home we use brown rice exclusively.  We buy Diamond G brand brown rice in 5lb brown paper bags at our local supermarket. Brown rice has more nutritional value and it also has fiber that is not present in gob-standard white rice.

Because we eat rice almost every day, and we cook virtually all of our meals at home (we both work from home here) we bought ourselves a very nice Japanese rice cooker.  Having visited Tokyo several times, I have a real appreciation for Japanese food, and I know that they take their rice very, very seriously.

Brown rice can be dehydrated and rehydrated nicely.  If the holes on your trays are too large for the rice, you can put thin plastic wrap on the trays.  I know if you dehydrate  fruits and vegetables at too high temperatures, you kill the enzymes in them, not sure how/if high dehydrator temperatures affect rice that much.

I'd probably be more enthusiastic about rice if I knew how to cook Indian and Asian cuisine better.  When I was a kid, I used to sprinkle sugar and cinammon on white rice.  Don't do that anymore.

Sugar on rice was my favorite as a kid too. And I quit it long ago also. I also think my mom exclusivly cooked Minute Rice. Maybe that is why it needed the sugar.

I have been trying some new rice recipes to show my family that rice can be their friend too, but they are getting mulish. One that both my husband and I like is brown rice cooked with part of the water replaced with orange juice, about 1/4 cup, some orange zest and a handful of chopped nuts thrown in for texture. Add some ginger, either freshly grated or powdered, and it is very tasty.
