LENTIL SOUP

I made some great lentil soup yesterday. Tough I only tried a spoonful ( stomach still a wreck from sat. dinner )the whole family loved it.
just sauteed--1 small chopped onion, 3 chopped carrots,3 chopped celery........ for about five minutes, in olive oil.
then added 3 medium chopped tomato and 15 oz. tomato sauce,1/2 teas. basil and pepper. cooked for like 15 minutes.
then I added a small bag of lentil and a small bag of split peas.........
added like 10 cups of water and simmered for an hour.
It came out real thick and good.
you dont add salt till the end. something about adding salt while cooking will make the lentils not become soft.

Thanks for posting this, JUDI42MIL. It really sounds wonderful.  I've always loved lentil soup, and somehow adding celery makes it so much better.
